cream cheese and dried apricots cookies



This cookie is made without any of the traditional christmas spices. It tastes a little sour because of the dried apricots and between all those other spicy and chocolatey cookies, this is, how my mama called it today, "a refreshing christmas cookie".

Makes about 50 cookies

200g grounded hazelnuts
50g dried apricots
200g cream cheese (I used Philadelphia)
120g sugar
1 teaspoon vanilla paste
1 egg white
50g pastry flour
0.5 teaspoon baking powder
confectioners sugar for decorating

Mix the cream cheese, sugar and vanilla pastet. Add egg white. Chop the dried apricots into very small pieces and add them with the hazelnuts, pastry flour and baking powder to the mixture. Stir everything until combined, The dough should be very moist. If its too dry, add some water or some more egg white.


Form little balls and place them on a baking sheet. Then cover them with the confectioners sugar.

Bake them for about 15 minutes at 356F degrees (180°C). They should be slightly golden on the outside. If you have bigger balls, make sure to bake your cookies 2-3 minutes longer.

"Spitzbuebe" - Linzer cookies




This are the favorite cookies from a very good friend of mine. So I made a whole batch for him. When you eat one, you have the perfect cookie flavour explosion in your mouth - the thin crunchy biscuit with the jam in the middle and the sweetnes from the confectioners sugar on top - perfect!


~ "Spitzbuebe" - Linzer cookies ~


I used raspberry jam in the middle, but you can use whatever you like. I just suggest to use something with a bit of color so you can see it trough the little holes on top.


Makes about 50 cookies

For the dough:
250g butter at room temperature
125g sugar
2 teespoons vanilla sugar
1 dash of salt
1 egg white
350g pastry flour

For the decoration:
raspberry jam
confectioners sugar

Stir the butter until smooth, add sugar, vanilla sugar, salt and mix well. Then add the flour and egg white and combine everything. Wrap the dough in foil and refrigerate for at least 1 hour.

Take it out and let it warm up a little bit. Roll out the dough until its 3mm thick. This dough contains a lot of butter, so once it gets warm it will stick to everything. Spread the dough between two sheets of baking paper (or some foil) and you will be fine. 


Cut out round cookies. Mine had a diameter of 5cm. In one half make three little holes. In Switzerland you can buy special cookie cutters for those sort of cookies. If you don't have one, just a big round cutter and for the holes something little, like a pen cap.


Bake them at 392F degrees (200°C) for 6-8 minutes - depending on how thick you rolled them out. 
Let them cool completely. Then spread some jam on the bottoms and dust the top parts with a good amount of confectioners sugar. Stick the pieces together and enjoy the cookie explosion in your mouth :)

"Schokoladenküsse" - Chocolate kisses



~ "Schokoladenküsse" - Chocolate kisses ~


Perfect for all chocolate lovers out there. Instead of store bought chocolate icing, you can just melt some dark chocolate with a little milk and make sure to cutting off just a tiny tiny edge of your pastry bag!


Makes about 40 cookies

150g butter at room temperature
125g confectioners sugar
10g vanilla sugar
1 egg
200g pastry flour
2 tablespoons unsweetend cocoa
1 dash of salt
10g vanilla sugar
150g chocolate icing (store bought or homemade - see above!)


Mix together the butter, confectioners sugar, vanilla sugar and the egg. Add the flour, cocoa, salt and mix again until combined. Then wrap the dough in some foil and refrigerate it for at least 1 hour.

Preheat the oven to 320F degrees (160°C).

Take the dough out of the fridge and form little balls. They should have the size of a walnut. Roll them between the palms of your hands till they get shiny. Place the little chocolate balls on a baking sheet and bake for about 12 minutes.


Let them cool completely. Fill a pastry bag with the chocolate icing and decorate your cookies. (I made some wild lines, but you can do whatever you like.


Christmas Cookies

I love love love christmas - the christmas lights in the city, all the sparkles, old christmas songs, giving presents away, christmas trees, hot spiced wine, christmas markets - just everything about it. And of course all the yummie food.

My mama and I always made christmas cookies together. This year she hadn't good time, so I started the cookie marathon on my own. I baked cookies for the last two days (for my family) and I will baking cookies the whole next weekend (for my colleagues at work). And of course I will share all the recipes with you. Most of them are traditional swiss or german christmas cookie recipes and they will take some time to make but you and your family will loooove them.
