"Dreikönigs Kuchen" - Kings Cake



On january the 6th we celebrate the "Dreikönigs-Tag". Actually its a christian holiday but for most of the people in Switzerland celebrate  this day, means buy or bake a Kings Cake and crown the king or queen of the family.

In my family we celebrated this day every year with a homemade cake from my mum. The person who found the little plastic king in their slice of cake was the king or queen for that day. I really really like this cake, so this year I made one for my family.

The cake is more like a bread, its made out of sweet yeast dough with raisins. You could also use chocolate chips instead of raisins or any other dried or crystallized fruits. I didn't have a little plastic king, so I used an almond instead. So we are going to crown the "almond king" today :)



For the dough:
60g butter
500g pastry flour
1 teaspoon salt
100g sugar
20g fresh yeast
2.25 dl milk
1 egg
50g raisins

For the decoration:
coarse sugar
flaked almonds
1 egg
1 almond

Melt the butter in a little pan.. Mix together the flour, salt and sugar. Make a little hole in the middle and add the egg and melted butter. Then dissolve the yeast in the milk and add it to the dough. Stir only a little bit, so that everthing just comes together. Add the raisins and knead until you get a smooth and soft dough.



Cover the dough with a damp kitchen towel and let it rest for about 2 hours.
Take a 280g piece of dough and form a big ball. This will be the middle part of your Kings Cake. With the remaining dough, form 8 little balls and place them around the big one. Place the almond in one of them. Leave a little space between each of them, the dough will enlarge in the oven. Cover your cake again with a damp towel and let it rest for another half an hour.



Preheat the oven to 374F degrees (190°C). Whisk the egg and brush it on the cake then sprinkle the top with the coarse sugar and the flaked almonds. Bake for about 25-30 minutes.
